Paul Dolan was a Biodynamic farming pioneer, and his home ranch, Dark Horse, showcases the expression of this craft exquisitely. The 70-acre farm is teeming with life; horses, sheep, chickens, beneficial insects, and hundreds of different plant varieties call this ranch their home. The vines are robust, and although it's dry farmed, the soil is bursting with organic matter, which keeps the vineyard healthy and fruitful. Farming here is as much art as it is science, and the result creates a truly special wine from a truly special place.
The nose is teeming with chocolate, blackberry pie, and worn in leather. The palate is broad and soft and smooth, encouraged by the extended barrel aging on this wine. Tannins are decidedly present, but yet again so silky. Mid and late palate notes of blueberry, more cocoa, and lightly creamed coffee are balanced by pert acidity.
