This blend is an employee favorite every year. Barrel fermented and aged Chardonnay sourced from vineyards that are perfectly suited to grow fruit bursting with depth and flavor. We stir the lees in barrel every so often to create roundness and complexity, and usually push a few of the different lots that make up the blend through secondary fermentation. This incorporates a touch of creaminess on the palate. A little bit of new French oak (but not too much!) lends all of its yummy magical goodness into the wine once it’s barreled down and aging. Mix that all together and you have created a recipe for classic Russian River Chardonnay.
Grapes for this vintage’s Swallowtail was sourced from six different vineyards that span the Russian River Valley. The 2021 is complex, but very approachable, with aromatic notes of vanilla wafer and lemon spiced jam on warm toast. The palate is bread dough and tangerine, with a wonderful balance of fresh acidity and fine tannin. This wine finishes smooth, with notes of lemon tart, honeysuckle, and oak-inspired toast.
