Our inaugural “Brut” is a blend consisting predominately of Chardonnay. It is made in the traditional Methode Champenoise style, which along with extended lees aging creates a complex and wonderfully yeasty profile with nice body and refined effervescence.
This sparkler has refined aromatics of strawberry tart, dried apricot, and saline minerality. The palate shines bright fruits and straw, with crisp, tight bubbles complimenting the sweetness. Overall, the balance of fruit and acid are really the highlight of this wine, perfectly tight roping between sweet fruits and zippy acidity. The finish showcases this perfectly, with tart strawberry, pert acidity, and classic yeast components beautifully married together.
